Rooted in the tradition of mezcal is the concept of resourcefulness; use what you have to make what you can.  This philosophy is central to our approach at Jano.  Why import agave from Mexico when the American Southwest is brimming with indigenous species?

AGAVE AMERICANA

Agave Americana: Known by many names: Americana, Arroqueno, Coyote, Sierra Negra; This rare agave is sought out by aficionados world over. One of the largest and most majestic of all agave species, Americanas are characterized by their blue-gray leaves and long life. Taking 15-25 years to reach full maturity, and towering to 10 ft in height, this agave is not for the impatient mezcalero. California’s climate is ideal for Americanas, naturally being drought tolerant and hardy enough to withstand both winter’s frost and summer’s scorching heat. Americanas produce a spirit of excellent quality exhibiting true depth of flavor that only slow growth can imbue and slow cooking can unlock. Here at Jano, we consider Agave Americana to be the crown jewel of California agave and the flagship of our brand.
